oz - Salmon
x - Red peppers
x oz - Lemon juice
x - Salt & Pepper
x - Cayenne
x oz - Olive oil
x - Balsamic Vinaigrette
x - Pine nuts
x - Fresh spinach leaves
1 per entree - Lemon wedge

Instructions
Season
the salmon with the salt, pepper and cayenne. Marinate for 30
minutes and then grill.
Slice the red peppers into long thin strips. Coat the strips with
olive oil and then season with salt and pepper. Grill for 20 minutes.
Serve over a bed of fresh spinach leaves, tossed with balsamic
vinaigrette and pine nuts. Include a lemon wedge with each
entree. |
Jim has made this at least once (picture
submitted as proof although this could have been take-out
from Red Lobster). However, the relative quantities of each
ingredient are still a mystery.
