| One Pot Veggie Bolognese Pasta |

Ingredients
1-lb - Impossible ground sausage
1 - Medium onion, finely chopped
1/4 cup - Olive oil
8-10 - Garlic cloves, minced (yes)
Salt & pepper - To taste
1/4 tsp - Red chili flakes (double if you want some heat)
4 oz - Tomato paste
28 oz - Crushed tomatoes
4 cups - Vegetable stock (alternative: or 3 cups with 1 cup red wine)
4 sprigs - Thyme
1 lb - Pasta noodles (rigatoni and penne are preferred in our house)
1/4 cup - Milk (or cream)
1/2 cup - Parmesan cheese, grated
1/4 cup - Fresh basil leaves, thinly sliced

Yes, this works great with meat meat.
1-lb - Ground beef or pork or whatever
4-6 slices of bacon, chopped (cook before the onions & garlic)

Instructions
Preheat a large soup pot or dutch
oven.
Add the oil and heat it for 1-2 minutes over medium heat. Add in the onion and garlic, seasoning liberally
with salt and pepper. Mix in the red pepper chili flakes (1/2 - 1 tsp brings some heat). Do this for
5 minutes.
Add in the Impossible ground sausage. Cook, breaking up and mashing the 'meat' with a wooden spoon, for
5 minutes or until browned all over. Once browned, stir in the tomato paste, crushed tomatoes, vegetable
stock, and thyme. Bring the mixture to a boil, then reduce to a simmer, cover, and cook for
15-20 minutes.
Uncover, remove the thyme sprigs. Stir the pasta in, allow it to simmer for about 15 minutes until the pasta
is cooked and the sauce has thickened, stirring occasionally.
Stir in the milk, parmesan cheese, and basil. Adjust the seasoning until dialed.
Garnish with more basil.
