Mom's
Meatloaf |
|
Ingredients
2
strips of bacon
1/2 - 3/4 lb ground chuck
1.5 teaspoons Crazy Salt or similar seasoning salt
1/4 - 1/2 onion, chopped
1/2 green pepper, chopped
1 tsp Paprika
1 can Stewed tomatoes
1 Tablespoon tomato paste
1.5 - 2 cups macaroni
Optional:
3-4 cloves garlic, chopped
2-3 Tablespoons fresh parsley, chopped |
Instructions
Initial
Steps
- Macaroni - Cook and set aside
- Bacon - brown, dry on paper towel, then crumble
Browning
Do
these in order...the browning really adds to the flavor
- Ground chuck - with Crazy Salt
- Chopped onion
- Chopped green pepper
Drain all of the fat from the pan. [NOTE: I drain what I can and
use a piece of paper towl to absorb what remains]
Final Preparation
Add the following: Paprika, parsley, stewed tomatoes and tomato
paste
Bring to a bubbly boil and then reduce to very low. Let simmer
for about 30 minutes -- this will let the flavors work together.
At the end of cooking time, add additional 1-2 T tomato paste
for a more intense tomato flavor. Adjust seasoning with salt &
pepper. For a bit more color and crunch, some of the green pepper
can be saved for the last 5-10 minutes (completely optional).
More onion can also be used if preferred.
