Cinnamon Oatmeal Cookies
Ingredients
1cup - Brown sugar
3/4 cup - Granulated sugar
1 cup - Butter
2 - Eggs
2 cups - Flour
1/2 tsp - Salt
1 tsp - Soda
1 tsp - Baking powder
1 tsp - Vanilla
2 cups - Rolled oats
3 T - Sugar
1 T - Cinnamon
Instructions
Pre-heat oven to 300 degrees. In large bowl whip egg yolks and sugar. In a small sauce pan, over low heat, bring cream, salt, and vanilla to simmer. Add cream to yolk mixture, whisking constantly as you add it. Set aside. Place 4 ramekins in a baking pan. Cover the bottoms of ramekins with chocolate chips. Pour yolk/cream mixture over the chips in each ramekin. Then pour water in the baking dish so that it comes up about 1/2 way up the ramekins. Bake for about 1 hour. Remove ramekins from the water and refrigerate (covered) for 8 hours (or overnight). Just prior to serving, sprinkle brown sugar on the tops and place them under the broiler in your oven -- WATCH CLOSELY -- THIS HAPPENS FAST -- until they get caramelized...serve immediately.
