Double Chocolate Walnut Biscotti |
|
Ingredients
2 cups - Flour
1/2 cup - Cocoa
1 tsp. - Baking soda
1 tsp. - Salt
6 T - butter
1 cup - Sugar
2 - - Eggs, large
1 cup - Walnuts, coarsely chopped
3/4 cup - Chocolate chips
1 T - Powered sugar
|
Instructions
Pre-heat oven to 350 degrees.
Whisk together flour, cocoa, baking soda and salt. In another bowl, beat butter and sugar-add eggs and beat well. Stir in flour mixture to form stiff dough. Stir in walnuts and chips.
Note: I use food processor to blend butter and sugar, and then add eggs. When that is well blended, I add all the dry ingredients-process until just blended and add the walnuts and the chips-barely process and blend the remainder by hand.
Form dough into 4 slightly flat logs (about 12" long) and sprinkle with powdered sugar. Bake 35 minutes (slightly firm to the touch). Cool on baking sheet 5 minutes. Cut diagonally in ¾ slices-arrange cut side down on baking sheet-bake until crisp-about 10 minutes.
Cool on rack.
